Basil, Spinach and Tomato Pasta

Day two of no calorie counting. Yesterday I focused on not calculating how many calories I had left for the day but just wrote down what I ate plus the portions. Today I am going to write down the foods I ate but not the portions. This feels good so far as I am listening more to my personal hunger level and not the portion size on the label’s hunger level. If that makes any sense lol.

For lunch today I made a basil, spinach and tomato pasta. It’s very simple but sometimes that’s all you need in a recipe.

Ingredients:

1/2 Cup Uncooked Whole Wheat Pasta

1/4 Cup Diced Tomatoes

1/4 Cup Frozen Spinach, Thawed

1 tsp Basil Leaves

2 tsp Olive Oil, Divided

2 tsp Parmesan Cheese, Divided

Cook pasta according to package directions, drain. Heat a skillet on low-medium flame. Add 1 tsp olive oil, 1 tsp parmesan cheese and basil leaves and heat. Add spinach and diced tomatoes and blend together. Add pasta and remainder of olive oil and cook until pasta is well coated with all ingredients. Plate and sprinkle with parmesan cheese. Makes one serving.
