Dinner today was a nice little salad with chopped up romaine lettuce, baked plantain and a “new” concoction…Basil Pepper Chicken! I have to share with you what I marinated the chicken in because it was just that good!
4 oz. of Chicken Breast (cut into bite-sized pieces)
1 tsp of Basil
1/2 tsp of Parsley Flakes
1/4 tsp each of Onion and Garlic Powder (or fresh)
1/2 tsp of pepper
3 tsp of Olive Oil, divided
Mix 2 tsp of olive oil with basil, parsley, onion, garlic and pepper. Place chicken pieces into a bowl and coat with olive oil mixture, let sit in fridge for about 30 minutes. Place a small pan on the stove on low flame. Place 1 tsp of olive oil onto pan and let it heat for 1 minute. Place chicken pieces into pan and cook until meat is no longer pink inside or juices run clear when cut. Once cooked let it cool for 1-2 minutes and top onto your favorite salad. Enjoy!
Before this yummy dinner ended the day so nicely, I woke up this morning bright and early and did some yoga. No porch anymore, but that’s okay. There is a lot of good natural lighting in this apartment which makes it feel like I am sort of outside. After yoga I had a toasted whole wheat waffle with my baked apple topping, some almonds and a banana for breakfast.
Today was filled with lots of phone calls, paper work, job applications, etc. I munched on a nice juicy peach during all this havoc. I think Mr. Mini Hulk was upset he didn’t get a bite.
