Coconut, Almond and Cinnamon Heaven

Breakfast yesterday was one of TrulyJess’s protein pancakes. These are so good and super filling. This time I topped mine with toasted coconut flakes and almonds sprinkled with cinnamon. To toast them simply place almonds and coconut flakes onto a cookie sheet and sprinkle cinnamon on the top. Place in a 325 degree pre-heated oven and heat for about 5 minutes. Trust me you’ll know it’s done toasting because your kitchen will smell like cinnamon!

I had a quick snack on the go while heading to work. Had one of my pumpkin oatmeal breakfast squares with a french vanilla yogurt. I think I can seriously eat this breakfast square forever. It’s tastes so good and it’s perfect for the fall.

I added a little bit of my maple pumpkin butter to the oatmeal square before wrapping it. Pure heaven!

For lunch yesterday, I packed some rice penne pasta with a little bit of ground meat, tomato and basil pasta sauce, broccoli and a sprinkle of parmesan cheese. Had the ground meat in the pasta to change it up a bit from the usual chicken parm.

For dinner, I had breakfast. My stomach wasn’t feeling too great so I had some bland stuff. I had Enjoy Life’s Cinnamon Crunch granola with milk and a banana.

My stomach did feel a bit better after, which is definitely a good thing. I tried to sleep it off and this morning I feel much better. My stomach is still a bit bloated but hopefully it goes down by the end of the day. Wish me some “feeling better” wellness!
