Peach Protein Pancakes!

Oh my gosh, why didn’t I think of this before? When I went to the supermarket I picked up one of my favorite Stonyfield yogurt; the 0% fat in peach. Then I thought to myself why not switch up the recipe and use the peach yogurt instead of plain yogurt and make peach protein pancakes? I decided to also get a can of peaches to use as some sort of topping. (Just as a FYI, if you don’t have gluten-free Bisquick or other pancake mix, just use 1 Tbsp your choice flour and 1/4 tsp of baking powder).

There are not many flavors I would do this for. I remember a few years ago I did a blueberry yogurt flavored pancakes and it was really tasty! Now however, since I like to add toppings galore, I search online and found this “heavenly baked peaches” recipe.

I just divided the ingredients in half since my can was only 8 oz. and not 15 oz. They came out extremely good and I am going to be adding this dish to my protein pancake rotation. I have “baked” apple topping and now a real baked peach topping! I drizzled the pancakes with some maple syrup and added some crushed almonds. What could top this breakfast as a mid-morning snack? I had half of a white chocolate macadamia nut Cliff bar.

It looked so good and was actually really yummy! A new addition to my bar line for sure.

For lunch I had some carrots and cheese english muffin “pizzas” in a non-pizza form. Instead of having english muffins I made some rolls made out of Bob Red’s Mill’s gluten-free pizza crust and added bacon to the now carrots and cheese egg sandwich.This pizza crust mix has saved me in terms of my pizza and bread cravings. Another thing I did today was pre-portion this giant Hershey’s dark chocolate bar. I prefer to have a higher percentage of dark chocolate but for my budget this week, this is what I got.

I used some plastic wrap and made four servings out of this bar. The bar was only $1.48, making each serving only about $0.37!

It only took about a couple of minutes and now I have perfect little portioned chocolate bars. Maintaining a healthy lifestyle and enjoying sweets in moderation isn’t so hard when you just take that extra minute to prepare something in advanced. Dinner tonight was some chicken “parmesan.” Sorry bought the no picture, but I’m sure you know what I had after right? Some chocolate of course!
