You know I had to make my own little version of Chocolate Covered Katie’s Vanilla Ice Milk. I’ve been hooked on it and trying to make different varieties to enjoy. It all starts with one recipe that leads to fun and creative ideas!

I like my ice cream more melty, hence why the recipe is perfect for me. It’s an awesome late night treat that you don’t have to feel guilty about. I love that it doesn’t weigh you down because of its light texture. I don’t think I ever have to by ice cream or frozen yogurt ever again. Okay, maybe not to the froyo. I LOVE froyo.

If you only have plain or vanilla almond milk, that’s fine too! It just won’t be as chocolatey. For a creamier texture, she suggests using at least a 1/4 cup of canned coconut milk. If you want to reduce fat, sugar and calories, omit the melted dark chocolate step and save about 50 calories, 2.5g of sugar and 5g of fat!

Also feel free to play around with the different kinds of chocolates and fixings you could add. Maybe white chocolate? Maybe some almonds? Hmm, the possibilities are so endless. Enjoy!

(Inspired By Katie’s Voluminous Vanilla “Ice Cream”)

Ingredients

2 Squares of Dark Chocolate, Divided (I used Ghirardelli Twilight Delight 72%)
1 Packet of Stevia (or 1 Tbsp of Your Choice Sugar)
1/4 tsp of Vanilla Extract (Optional)
3/4 Cup of Almond Milk* (I Used Unsweetened Chocolate Almond Breeze)
Dash of Salt

Take one dark chocolate square and chop it into little pieces (or use 2 tsps of chocolate chips). Save second dark chocolate square. Mix dark chocolate pieces, Stevia, almond milk, vanilla and salt.

Place into a plastic container and freeze (I usually freeze it for 4-6 hours or overnight). Once frozen, remove “ice cream” mixture (let it thaw for 15 minutes or place in microwave for 30 seconds). Melt second dark chocolate in microwave for about 20-40 seconds.

Blend melted dark chocolate and “ice cream” mixture in a food processor, blender, magic bullet… you get the idea. Place into your favorite bowl or cup and top “ice cream” with more chocolate pieces/chips, whip cream, fudge. Anything*!Calories (Serves One): 135  Fat: 12.5g  Fiber: 2.5g  Sugar: 5g

Options*

  • Feel free to use your favorite chocolate milk and If you want to lower the fat content you can use a fat-free or low-fat milk.
