There isn’t much I am going to write for today. It’s quite early in the morning and I have a long day ahead of me. Why? Because I am New York bound baby! Hopefully my mom doesn’t read this post. She doesn’t know that I am going up to surprise her early. Maybe I’ll just delete it from her email. Shh!
This morning I had a delicious coconut crunch “muffin top” and banana. Basically I used coconut granola, hence the name. I love playing with my recipes to keep meals fresh and yummy.
I am heading to work soon but here are my road snacks: I have a strawberry, cranberry & almonds (my new favorite snack) salad and a Clif Chocolate Chip bar rolled in coconut flakes. I just can’t get tired of this one.
After I get out of work I’ll be heading home for a few days to celebrate my birthday with family and friends. I’m super excited that I almost couldn’t sleep. I’m going to miss Mr. Basil dearly. He is growing so fast!
My lunch for work is grilled chicken with broccoli and homemade fries with a vanilla Chobani for my sweet tooth. I’m going to need all the carb and protein energy I can get. This, plus the protein from the almonds and Clif bar should keep me going from work to road to New York for sure.
Alright, alright I really need to get going for work. I shall update with you all later on Monday after I hang out with my family and some friends. I also have a date with Orchard Beach and the oven. I’m baking cupcakes and brownies, yummy!
Question: Do you ever have those crazy long days and know what foods you will need to sustain you?
If I have a long day Clif bars and some kind of nuts are ALWAYS on my menu.
