I tried to make hummus like I said I was going to do. I just added 1 1/2 Tbsps of olive oil, dash of salt and a hint of pepper and parsley. The consistency came out perfect and when I tasted it, it wasn’t so bad.
But when I took it to school with the apple, baby carrots and Nut-Thins, it just didn’t taste good. This is probably my third or fourth time trying out hummus. I have come to the conclusion that I really don’t like it. I rather have a spinach chickpea turkey/tofu burger.
Speaking of school, the morning before that school day started, I had the lovely surprise of seeing this. A garbage truck had hit my car and they so kindly left a note. But come on, really? Plus, the damage is more than the mirror. It also impacted the window and door. Sigh.
On a happy note, I by mistake made a pita/hot”ish” pocket. I stuffed it with chopped up spring mix salad, basil, olive oil, garlic, parmesan and mozzarella cheese. Basically, I used this yeast free focaccia recipe (courtesy of Bethany) and added extra water by mistake (about 1/2 cup). I decided to add 1/2 tsp more just in case.
I then put the batter in a brownie pan and it had risen a lot and made the bread much thicker. I was able to cut it in half but not able to take the two pieces apart. That’s when I decided just to stuff it with the ingredients I was going to use for the flatbread.
The recipe was super simple and you didn’t even need eggs. I definitely am going to use it again, especially during those “I crave pizza” moments and have no dough. All I needed was Bob Red Mill’s All Purpose Gluten Free Flour and I was good to go!
