I have been enjoying my time home. Resting my shoulder and taking some well deserved me time has been great. I still always make room for others, like making this mini bundt cake for my friend.
The frosting I used was this 7 minutes frosting recipe. It came out so delicious and I am excited that I now can have some kind of frosting (many have corn). That makes me happy.
Before I came, I made some maple “almond butter” muffin tops at home but this time, I put them into a square mold to give it a different look. I topped it with more almond butter and coconut flakes.
Two for home this weekend and two for breakfast when I get back home. Who wants to cook after being on a long trip then waking up at 6:00am the next day? Not I, said the cat.
The best recipe of the week? Of course, all of mines are the best but this gluten-free coconut flour pizza crust was mighty fine. I was craving an egg sandwich and didn’t have bread and somehow (courtesy of Facebook news feed) I found the link to the recipe.
I initially was just going to make it into a pizza, but I didn’t have enough cheese and so I just decided to cut it in half and make an egg and broccoli sandwich topped with salt, pepper, parsley, melted butter and a hint of garlic. The results? Very yummy and filling.
I subbed the flax seed/ buckwheat for grounded almonds. Noticed I didn’t say flour. Well that is because my food processor isn’t as powerful anymore but at least it can still do it’s job.
I was on the bus when I wrote this post. It’s nice that the Wi-Fi is actually working. I have way too many things to take care of when I go home. Writing some posts in advanced definitely helps.
Wish me luck with my doctor’s appointments. I don’t know what I will accomplish but I have to start somewhere. Hope everyone enjoyed their weekend! Tootles.
