The first What I Ate Wednesday of October. Isn’t it crazy how time flies? Here are my eats from yesterday aka Tuesday aka school day. I had an exam, so snacking was a huge must for the day. If you don’t know what WIAW is, check it out over at Peas and Crayons!Breakfast: My first taste of pumpkin for the season. I whipped up a couple batches of pumpkin spice pancakes. They were absolutely delicious and I wish breakfast was 24/7. I could so eat these all day. Instead of graham cracker crumbs, I topped it with almond butter and some maple glazed almonds. Mmm.Snack: I munched on a banana and a Stonyfield yogurt, while I was studying for my exam. Lunch: I went with a chicken burger topped with half of a Babybel cheese, sauteed green beans and black beans. I definitely needed the staying power for the long drive to school, plus more studying.Snack: A few nuts and string cheese to continue my studying adventures.Dinner: I had a fruit and cheese platter for dinner because I had school and I like to munch throughout the whole four hours. I mean, it can get boring, so I rather have small things to pick at rather than one large meal. Quick, easy and yummy!Dessert? Something quite different from the normal. I had a Luna bar to satisfy that sweet salty craving from the fruit and cheese plate.How about you? When you have to study do you prefer big meals or snacking throughout?
