A place to read about me and what’s going on in my life!

Ooo La La

…I’m falling in love.

Know that song by Foster for the People? Love them. I also love this little guy. I had to leave him back home in New York, but he is always in my heart.Or this cereal find. I’m trying out this original this time.Getting some groceries; oats, fruit and such.More trail mix too.Now for some overnight “chia” breakfast pudding?Okay so it isn’t exactly pudding, but to me it had that “essence.” Maybe not really at all, but it tasted better then overnight oats to me. All you will need is the following:

  • 1/4 cup of your favorite regular or Greek yogurt (I used Stonyfield vanilla soy)
  • 1 1/2 Tbsps of Q’ia (or just chia seeds)
  • 2-3 Tbsps of Quick Oats
  • 2-3 Tbsps of Your Choice Milk (I used vanilla soy)
  • 2 tsps of Pure Maple Syrup (optional or save for topping)

Mix the ingredients well together. If it seems to liquidy, don’t worry! The chia seeds will absorb the moisture. Let it sit in the fridge overnight.  If you want, you can even add more yogurt or soy to get it to a more pudding consistency before you eat it in the morning.

I usually add 1-2 Tbsps of extra. When your ready to eat it for breakfast you can drizzle some maple syrup if you’d like or top with hemp seeds, dried fruit or whatever your heart desires!

Question: Are you a chia fan? Or do you stick with flax seeds? I heard that chia seeds are better then flax seeds but I haven’t personally done my research on that. Thoughts?

Week[End] Recap

Saturday.

One more day before I head back to Massachusetts. First day of work too. I’m pretty excited but nervous at the same time. New can always bit a bit scary.Oh and I forget to mention I went to lunch with one of my good friends and her daughter. We went to Burton’s Grill and split a gluten-free pizza and a salad. So good! When I go to the mall, I always go to Godiva. Tradition. Every time I take a little road trippy to New York, I always find this in my hands. I promise I wasn’t driving when I took this picture. Scouts honor.
This weekend I took my grandma to lunch at CiCi’s Pizza. My brother and I made dinner for the family.Desserts and breakfast cakes too!It was an awesome week. Now time for lunch with mom and grandma and movies later with my little brother. It’s my early birthday celebration today. More in two weeks!

Question: How is everyone’s weekend going so far? Hope you enjoy it!

The Gypsy Diaries

Okay. You probably are going to think I am the craziest person on this planet. Or maybe not, I can think of worse. But if you remember the WIAW post there was a strange location in this image below. You guessed it… it’s a kitchen Massachusetts. Yes, I am back in the North Shore. Who, what, when, why is probably on your mind right about now. As you know I went back to New York because I was just too sick to take care of myself and my parents felt it would be better if I went home. But now I am feeling strong and I decided a month ago to apply to some programs for my school a couple of months ago and see if any would work. One started in July and I wanted to do it, but I wasn’t sure what to say to my parents or what to do about my job (which is now my ex-job).I told my mom in early May about my plan and then I spoke to my dad during our trip to Baltimore. My mom and I talk more, so hence why she knew sooner. I found this awesome place in late May and couldn’t pass up. When I came to Boston, I visited the house and I fell in love with it.The people living in it are simply awesome. They are so loving and caring. Here is the view from one side from my room. Just so crisp, calm and refreshing. It’s very hard to meet genuinely nice people but now I have and it brings a smile to my face to have new friends. They even made me “welcome home” dinner. It was delish! So made them some chocolate mousse. There is even a cute little pet on the outside. Doesn’t Tiger look just like Hercules?I even got had an interview with this place on Wednesday and it went really well.So well that I got a call and… I got the job! I am super excited! Ya’ll know I just love Planet Fitness and love the gym. It’s a win-win situation. My life is like a gyspy; it’s random and forever changing. But I honestly wouldn’t have it any other way. However, this time around I think this gypsy is going to stay at her post for quite some time.

Question: If your a 20-something year old, how do you feel about your life? Is it as hectic and unsure as mine. Or are you cool and know what your doing. I hope someone does, because 80% of the time I don’t!

Sometimes You Have To Say No

I am writing to you today.

Technically I shouldn’t be because I should be in Atlantic City for the AAAI/ISMA conference. But after working 10 days straight and standing for over 80 hours, hurting my elbow and getting a cold/ flu; my body was just like no. I decided to hang with this guy.Though my mind said yes and I was all packed and ready to go with my snacks, I just couldn’t. I never felt so much pain and exhaustion in my body. I definitely coffee overdosed this week to try to keep going. I decided to see if the hotel would refund me and they did. I’m pretty sure because they were overbooked and I can retake the exam in the Cape Cod conference which is less then two months away. Not too shabby. I’ve been eating dairy here and there. Listening to my body and of course making sure it’s only organic. It’s just me being lazy to cook or think what to eat. Look what I found; new Chobani’s! The pistachio and dark chocolate one is quite delicious. I totally would eat it again. And as for the walnuts in the other, I will pick them out so don’t worry.  Also I’ve been eating Almond Dream non-dairy ice cream from time to time. Since it’s been hot, I don’t really want to eat anything except for cold things. And what is this? Well, you will have to stay tuned. So much to tell!Question: Have you ever had a moment where you just had to say no? Whether it was to your friend, to yourself or anyone? Or maybe to a job or trip?

WIAW#52: [Trying To Be] Lean & Green

Happy What I Ate Wednesday!

Gee, I am really trying to be good. I have less then 5 days til the AAAI/ISMA conference and I need to look my best. Unfortunately? “Mother Nature” has gotten in my way and I just want chocolate! But I am trying, so here are my eats as I try to be lean and green.wiawphotobuttonFor breakfasts, I make one and a half servings of this cake and slice it a la pancake. This had been my go to breakfast. I’ve just been wanting pancakes all the time for some reason.Lunches and dinners have been the same just like last week. Sometimes a little bit of chicken with black beans and green squash/ zucchini.Or maybe asparagus with chicken and a couple of bocchinis (little fresh mozzarella balls).I’ve gone out a few times this past week and I went to Panera with a friend and had a turkey sandwich on honey wheat bread. It was super delicious!Desserts and snacks? Same, same. Trail mixes or fruit. My cup of tea!935209_662724447074452_1607508794_nQuestion: What’s your favorite lean and green dish? From this week for me it’s been roasted chicken and asparagus. I can’t believe I never tried grilled asparagus, it’s the BOMB!

Frolicking

Hello my friends!

After a session I had on Sunday, I went with my mom to the Botanical Gardens to chill. It was so nice to just spend time with her as I have been super busy. Life is just getting in the way as of late. She’s too cute!Frolicking in the Rose Garden.Simply beautiful. We also had coffee and lunch together. I had a turkey and bacon panini with pesto, cheddar, tomatoes and arugula. Best sandwich I’ve had in ages. And how could I forget? On Saturday, we went to see Kinky Boots for her Mother’s Day present.I loved getting a little glittery. It was a pretty good show! I had fun with my moms and I am glad she enjoyed her evening.Sorry I’ve been MIA, it’s just been pretty hectic for me and I am trying to even remember to eat or pee sometimes. I know that may be too much information, but it’s quite true!

Question: How was everyone’s Memorial Day weekend? Any fun-ness? Hope you did because I was WORKING ALL DAMN DAY. Boo.

Vegan/ Acid Reflux Update + Ranting

I just don’t know. This week? Okay, I am going to get open and personal here. This week hasn’t been the greatest. A ton of things happened between dating, over training and me practically breaking myself at work. I feel like I don’t deserve all this annoyance, but I know it happens to best of us, even the nice ones.

I haven’t really took the time to focus on me. I’ve been busy focusing on training myself for the personal training exam, trying to get back in the dating world (which has been a complete an utter f$#%ing disaster) and falling down the stairs, messing up my elbow and burning myself three times a work. Yeah.

And then there is me being acidic, bloated and looking four months pregnant. It’s been embarrassing but I can pinpoint some culprits, which is good. Between cutting out dairy, attempting vegetarianism again and diving into veganism, I am finding what foods are happy for my tummy and which completely suck.

Here are a list of foods that make my tummy happy and unhappy. Now most of these foods are because I eat them, daily/ weekly. I don’t know about other foods, but here is what I know for me:

Happy Tummy Foods:

  • Baked/ Grilled Chicken (despite the fact that I really hate chicken for some reason nowadays)
  • Green/ Red Leaf Lettuce (found on accident, there was no spinach available for my sandwich)
  • Small Handfuls of Cashews
  • Soymilk/ Soy products (sorry iron absorption)
  • Dried Cranberries
  • Sunflower Seeds
  • White Rice/ Potatoes
  • Pears, Bananas (In moderation, however), Apples and Blackberries

Unhappy Tummy >.<

  • Carbs in EXCESS (especially oats, red potatoes, brown rice/ brown rice products)
  • Beans in EXCESS (especially red and black)
  • Red Meat (not the sausage!!!)
  • Spinach, Broccoli, Kale (accident too, because I ran out for a few days then re-ate it and omg bloat!)
  • Grapes, Blueberries Strawberries, Pineapples, and pretty much all other fruits
  • Pumpkin Seeds and Flax Seeds/Milk
  • Dried Cherries and Blueberries
  • Eggs (I don’t know why?!)
  • Nut Butters in EXCESS (since the fat content is way higher then if I just eat a few nuts)
  • Dark Chocolate in EXCESS (1/2 ounce is okay a day, but more then that I feel bloated and acidic)
  • All cheeses and butter products
  • All DAIRY (even fat-free, which makes me feel worse guess because there is either more sugar or salt to compensate for fat-free taste)

Then it dawned on me… why did I have my flattest stomach almost two years ago? I wasn’t eating much veggies, dairy or brown rice products and you know what? I have read about this, people who have a hard time digesting these things. The less greens I eat in a day, the better the tummy. I was pretty much eating a lot of bananas, apples, oats, chicken and soymilk.

Since I haven’t been feeling well because I am over-trained and broken, I’ve stuck to fresh fruits, nuts/ seeds, beans, mashed potatoes, organic soymilk and oatmeal and my stomach has been pretty much “unbloated.” That is until I devour chocolate r dried cherries or have a green smoothie because I am too lazy to cook.

I can’t do that anymore. I have to pay attention even if it kills me to not eat a vegetable at lunch or dinner. I try to be a good blogger (and health coach) and eat my veggies, but if it’s doing more harm then good, perhaps I shouldn’t over do it? I should go with what is good for my body, especially since my digestive system is super sensitive as ya’ll already know.

I hope this little list I put together helps some of you guys experiencing the same issues.  Right now for lunch I had a little chicken, a little beans and green leaf lettuce and I feel okay. Let’s keep experimenting and I will be sure to keep you posted!

Question: Any foods that your tummy just can’t stand that is not an allergen?
