Only a few more days til my 25th birthday and one day until I got home for a few days.
I feel like the past few months have been crazy for this chick here. I haven’t been the best blogger, but I hope y’all just bear with me. My training schedule for work has been crazy. I’ve mostly been working nights, so I am quite tired. But when I can, I manage a workout or two, even at 1:00am!
You guys are awesome at being patient with me. Totally appreciate it. Like this weird picture I forgot to show you from Saturday. My friends and I went to an art festival in downtown Beverly, MA.
Free Greek froyo? Yes please! So that’s the weird white thing you see. It was yummy.
I promise myself I need to get better with meal planning. I seriously just have to stop being a, pardon my french, lazy ass mofo. I bought some asparagus from Trader Joe’s.
I really didn’t care for the flavor, but I am just going to heat it up and “pan fry it” in some olive oil and garlic. That should do the trick. And I’ve been making my own trail mix; bought some chips, crans and the cashs. Mmm, love this combo.
I also gotta stop with the dairy. I just feel icky, but oh my gosh, why is dairy so good? I had this pomegranate Greek yogurt with blackberries and the Q’ia cereal. Damn, it was tasty!
I hope everyone is doing well! I am finishing this post to you at 2:00am… only four more days until my birthday! You know next week’s WIAW is going to be awesome.

Today is Friday; I am suppose to be off but I have to work later.
It’s only for a few hours and I can workout after my shift. But I did want to dress up a bit while I ran my errands. I feel like I’ve been wearing Planet Fitness gear all week. Well, that’s because I have, ha.
I went to run a few errands; bank, supermarket, the usual. I stopped by Walmart to grab some air fresher for my car. Unfortunately it smells like Mr. Hercules, sigh.
I also got some non-foodie things; hairspray, 2-1 shampoo and conditioner (which I only use in the summer) and some redness reducer face wash. This scrub is my favorite and only used in the summer too because my face gets red.
From the supermarket, I got a lot of dairy apparently. I like to avoid dairy because A. I am lactose intolerant (but low-fat kinds and yogurt aren’t too terrible) and B. it’s bloating factor. But I needed some quick snacks that are not trail mixes. I’ve over-trailed it!
I munched on the Wallaby (with Q-ia!) while I did some meal prepping.
My gawsh. I totally said meal prepping. Today I am trying to get back into it, even if its just packing fruit, nuts and a cheese wrap. I have to start somewhere. I haven’t meal prepped much in months. No lie.
And lastly, who can forget? Coffee. Non-fat latte’s with some raw sugar added. Heaven.

Happy What I Ate Wednesday!
It seems like Wednesday always comes super fast. I want to share with you my yummy eats over the past few days. Being back on my own means more cooking and as always good food. Check out WIAW over at Peas and Crayons if you haven’t already. Enjoy!
Breakfasts have been the cake again but this time I added 1 Tbsp of the Q’ia cereal. Mmm!
For snacks I do a trail mix for my first snack and some type of fruit for my second.
I recreated my favorite lunch from my old job. I roasted chicken and asparagus and had black beans to go with it. Love this combo of things.
After work one of the days, I went to the Brazilian place for dinner. It’s cheap, on the way home and delicious. I had zucchini, rice, beans and bean “stuffing.”
Post dinner? Oh yes, more chocolate cherry trail mix from Whole Foods. I mixed it with pumpkin seeds and took out the peanuts. I think I am addicted. Oh well, no shame here.

Another Wednesday means another What I Ate Wednesday.
You won’t guess where I am? That’s right, I am in Massachusetts. Of course, New England is always calling. For this WIAW, I show you some eats I have been grubbin’ on. But before we do that I wanted to talk about something that may be on your mine. Why are you seeing wheat?
Well to be honest and this is the honest truth; I just haven’t been hungry for anything. So the only thing I manage to eat is a sandwich that someone prepares for me. How does my stomach feel? Most of the times, it’s okay and I try to stick to sourdough or not to whole wheat bread (less bran for digesting). I know it probably not the best thing but I wanted to show you that I am human.
- Hanging with mom at the mall and made a stop at Panera Bread for a delicious panini!
It’s just that I have been all over the place, [even the post is all over] and these eats will show you so. Non-the-less they are delicious. Oh, I had to share with you some yummy vanilla froyo with blackberries and almonds with my mom while we were at the mall. Who can pass up some froyo?
Now for breakfasts, I have been doing this awesome WholeFoods find from Nature’s Path; Qi’a!
It’s a delicious gluten-free superfood cereal and I’ve mix it into my breakfast cakes. The stats are awesome, you just really have to check it out. I tried out the cranberry vanilla in store and fell in love. And it has 15% of iron, which is perfect for my anemic behind.
For snacks, I couldn’t resist picking up on of these bad boys.
And how bout my lunch today? My friend and I went for Brazilian. My, oh, my! But I think I am the only one who eats Vegetarian style at a specialty meat BBQ place.
Other snacks have included bananas, apples, pears, nuts/seeds and dark chocolate chips. Nothing too interesting. But so far my favorite meal was this one of a turkey and herb sandwich on sourdough bread with blackberries and yogurt. Mmm, mmm good!
Question: Do you ever feel being in the blog/ social media world that you have to be perfect? I sometimes feel that but now I am just being me and showing that I am not perfect, I have flaws… MANY, MANY flaws. But it’s what makes me, me.

Happy What I Ate Wednesday!
Gee, I am really trying to be good. I have less then 5 days til the AAAI/ISMA conference and I need to look my best. Unfortunately? “Mother Nature” has gotten in my way and I just want chocolate! But I am trying, so here are my eats as I try to be lean and green.
For breakfasts, I make one and a half servings of this cake and slice it a la pancake. This had been my go to breakfast. I’ve just been wanting pancakes all the time for some reason.
Lunches and dinners have been the same just like last week. Sometimes a little bit of chicken with black beans and green squash/ zucchini.
Or maybe asparagus with chicken and a couple of bocchinis (little fresh mozzarella balls).
I’ve gone out a few times this past week and I went to Panera with a friend and had a turkey sandwich on honey wheat bread. It was super delicious!
Desserts and snacks? Same, same. Trail mixes or fruit. My cup of tea!
Question: What’s your favorite lean and green dish? From this week for me it’s been roasted chicken and asparagus. I can’t believe I never tried grilled asparagus, it’s the BOMB!

Happy What I Ate Wednesday ya’ll!
Yesterday I was in Baltimore, Maryland. It was such a blast, but we’ll talk more about that tomorrow.
Today another Wednesday is here and it’s time to show you some eats, right? This week I am going to show you meals that have made my tummy happy; no acid/ bile build up and no pregnant look. Yes, no more of that please and if you don’t know what WIAW is, go check out Peas and Crayons.
Breakfasts have pretty much been the same, this breakfast cake with some type of nuts/ seeds or fruit on top. On of my favorite for this week? The cake with sunflower seeds, almonds, milk and fresh blueberries.
Just like last time, my snacks have been some type of fruit and nuts. I am getting tired of pears so I’ve been doing blackberries, bananas and even peaches.
Lunches and dinners have been the same too. Since I found what foods work for my stomach, it makes me so happy. It gets boring at times but I try and do what I can.
I found this yogurt at one of the local supermarkets here in the Bronx and this was the only one that didn’t have corn starch in it. It was pretty delicious I just wish I found a vanilla flavor.
I’ve been digging this combo of black beans on top of chicken with some greens. My, oh my.
Dessert? Well to be honest coffee, a banana or nuts have been my dessert as of late. Since I can’t really workout to the best of my ability due to my arm, I have to get more strict with food. And it feels great!
Question: Have you ever tried Silk soy yogurt? Ever had something “non-traditional” for dessert? I have to say have oatmeal for dessert one day was quite bizarre for this chocolate loving young lady.

Happy What I Ate Wednesday!
What does this title mean? Well I am going to show you some of my delicious eats filled with all sorts of berries while talking to you about my acid and bile reflux. Head on over to Peas and Crayons if you are new to this awesome food party.
You don’t know; ever since I started getting hyped up on coffee and had free coffee at my job, my body just went into acid overload. Not to mention I was eating TONS of chocolate and almonds. You see I get fed at my job, so I take advantage of chocolate and nuts since those are the “pricey” things I usually buy.

Breakfast: Oats with almond milk, flax/ sunflower seeds, raw cashews & blackberries.
Acid from coffee and acid + fat from chocolate and nuts equals a disgustingly acidic environment. I decided to tone down the coffee. I was tired of the acid/ bile build up. I have been coffee free for four days. Symptoms? I’ve had terrible migraines and caffeine withdrawal symptoms that make me sub the coffee with chocolate for the caffeine dosage, but it obviously makes things just as bad.

Snack: Blackberries w/ dried cranberries/ blueberries and raw cashew pieces.
The withdrawal symptoms are getting better. Last week I said I was going to do a vegan week. I did most days meat and dairy free except when I had milk chocolate, some eggs and a little chicken. I did notice that I wasn’t as bloated as the week before but I was still uncomfortable. This week I wanted to get more strict.

Lunch/ Dinners (recycled pic!): Veggie or black bean burger with nuts/ seeds and spinach.
I’ve had two full vegan days and I feel pretty good, digestion wise. I’m as bloated and even people are noticing. I did find it hard to decide what to eat though.So as my loving readers, I do ask you to give me some moral support. Pretty please and crackers? Never mind the crackers…

Dessert: Dark chocolate with dried cherries

Happy belated Mother’s Day to all the amazing mothers out there. On Sunday I had to go to work, but I woke up early and made my mom this coconut bake with the paleo option.
She loved it and like I always say, she is a picky eater. I also had her little gifts and a vanilla version of this cupcake. Who doesn’t love a cupcake?
My friend/ co-worker asked me to make a sugar-free cake for her family. Isn’t it cute?
At work (I work in an Italian specialty market, by the way), they made Italian chocolate covered strawberries. Oh my gawsh, they were delicious. My boss gave me three and I resisted and manged to only eat one and saved the rest for my parents.
I was also made a sandwich; it’s this multi-grain bread they have with maple turkey, romaine, swiss cheese and olive oil. Yes it was wheat, yes I was sluggish. Was it delicious? Oh yeah.
Today I actually went to buy a couple of outfits; one for my birthday and one for a concert I am going to on Saturday. It’s a dress of course, but hey, that’s me and my dress addiction. I also got a new workout top. I love that it’s air-y and looks pretty darn good. It was only $10.00 at JC Penny.
I haven’t been feeling to great and my body is over-trained. I’ve been cuddling a lot with this guy and I’ve been taking active rest days. I definitely feel better and know tomorrow, I can go hard in my workout.
Today I also kind of fasted, in the sense that I didn’t eat much (sorry for the blur!). All I had was fresh fruit, nuts/seeds and oats twice made with flaxmilk and honey. I felt like my body needed to just take a digestive break and I feel better, stomach wise. I don’t like to be below calories so between now and I bed time, I’ll probably munch on more fruit and nuts. Something like that…

I have been busy like I said; just too much going on. Never fear, I’m always near. Luckily a little bit of this every night helps my sanity. This stuff is too addicting. I will never buy it again, ever.
Oh and more coconut breakfast cakes for breakfast? Yes please, but give me some cranberries, flax & sunflower seeds with a smidge of milk will ya?
What about lunch? I think you are going to get a hoot out of this. How about some nuts, fruit and cheese?
Or maybe throw in an egg?
Or maybe no egg or cheese and use non-dairy cheese like Daiya?
I guess you can say I’ve been lazy in that department, but I am too busy studying for this exam. I can’t beleive June 2nd is practically right around the corner.
Okay, so I lied. The bathroom is actually right around the corner [*facepalm*], but you catch my drift. Have a great weekend everyone and I will soon be sharing some of the fun stuff I’ve been learning.

I’ve been doing a lot of oats as you know. But the oats and I don’t have a happy relationship, so I wanted to tone down the oats intake. I had a little bag of coconut flour and decided to search for a breakfast cake type recipe and found this one from The Wannabe Chef.
I modified the recipe using what I had on hand and it came out pretty delicious! I was surprised at the sweet hint of coconut in the cake. This recipe is gluten-free and has about 15g of protein! It can be completely paleo if you omit the oats and add a smidge more ground flax seeds or coconut flour.
It is your choice, but I like how the cake comes out with the oats better. It also doesn’t have as much fat as the original recipe, since you know I have to be careful due to my bile reflux. Best of all is you just have to pop in in the microwave. No baking [aka oven] required. Enjoy!
Ingredients for Coconut Breakfast Cake: (Inspired by this recipe, serves one)
- 2 Tbsps of Coconut Flour
- 1 -2 tsps of Agave or Honey
- 1 Tbsp of GF Rolled Oats (but any will do, or a sub for more flax or flour)
- 1 Whole Egg and 1 Egg White
- 1 Tbsp of Non-Dairy Milk
- 1 tsp of Earth Balance, melted (maybe try coconut oil or applesauce?)
- 1/2 tsp of Vanilla Extract
- Dash of Sea Salt
- 1 tsp of Ground Flax Seeds
Place all wet ingredients, plus sea salt into a bowl and whisk well together. Then add the flour, oats and flax seeds into bowl with wet ingredients. Mix well together. Then taking another small bowl or ramekin, spray bowl with a little non-stick cooking spray. Pour cake mixture into bowl.
Place in the microwave for 1 1/2 to 2 minutes, depending on your microwave. Remove cake from microwave and turn upside down to remove and place onto a plate or another bowl to let it cool for a few minutes. Top with more flax seeds, nuts, agave/ honey drizzle or whatever your heart desires.
