I Try And Do My Best

Today is Friday; I am suppose to be off but I have to work later.

It’s only for a few hours and I can workout after my shift. But I did want to dress up a bit while I ran my errands. I feel like I’ve been wearing Planet Fitness gear all week. Well, that’s because I have, ha.I went to run a few errands; bank, supermarket, the usual. I stopped by Walmart to grab some air fresher for my car. Unfortunately it smells like Mr. Hercules, sigh.I also got some non-foodie things; hairspray, 2-1 shampoo and conditioner (which I only use in the summer) and some redness reducer face wash. This scrub is my favorite and only used in the summer too because my face gets red.From the supermarket, I got a lot of dairy apparently. I like to avoid dairy because A. I am lactose intolerant (but low-fat kinds and yogurt aren’t too terrible) and B. it’s bloating factor. But I needed some quick snacks that are not trail mixes. I’ve over-trailed it!I munched on the Wallaby (with Q-ia!) while I did some meal prepping.My gawsh. I totally said meal prepping. Today I am trying to get back into it, even if its just packing fruit, nuts and a cheese wrap. I have to start somewhere. I haven’t meal prepped much in months. No lie.And lastly, who can forget? Coffee. Non-fat latte’s with some raw sugar added. Heaven.Hope everyone has an awesome weekend. I will be working both days but going home soon! Are you doing anything fun? Tell me :-)

Ooo La La

…I’m falling in love.

Know that song by Foster for the People? Love them. I also love this little guy. I had to leave him back home in New York, but he is always in my heart.Or this cereal find. I’m trying out this original this time.Getting some groceries; oats, fruit and such.More trail mix too.Now for some overnight “chia” breakfast pudding?Okay so it isn’t exactly pudding, but to me it had that “essence.” Maybe not really at all, but it tasted better then overnight oats to me. All you will need is the following:

  • 1/4 cup of your favorite regular or Greek yogurt (I used Stonyfield vanilla soy)
  • 1 1/2 Tbsps of Q’ia (or just chia seeds)
  • 2-3 Tbsps of Quick Oats
  • 2-3 Tbsps of Your Choice Milk (I used vanilla soy)
  • 2 tsps of Pure Maple Syrup (optional or save for topping)

Mix the ingredients well together. If it seems to liquidy, don’t worry! The chia seeds will absorb the moisture. Let it sit in the fridge overnight.  If you want, you can even add more yogurt or soy to get it to a more pudding consistency before you eat it in the morning.

I usually add 1-2 Tbsps of extra. When your ready to eat it for breakfast you can drizzle some maple syrup if you’d like or top with hemp seeds, dried fruit or whatever your heart desires!

Question: Are you a chia fan? Or do you stick with flax seeds? I heard that chia seeds are better then flax seeds but I haven’t personally done my research on that. Thoughts?

WIAW #49: The Return

You’ll probably notice that my last post was on Friday. To be honest, I just haven’t felt like taking pictures, posting or doing much of anything. Well that isn’t entirely true.

I’ve been busy with work and coaching people that every second I get I am either cleaning, prepping food, working out or trying to study for my personal training exam. Don’t take it personally if you don’t see much of me this month. I will try my best, but don’t worry I will be around.

For this What I Ate Wednesday, brought to you by Peas and Crayons, I show you a few eats I have devoured this past week. I have mostly been doing meat and dairy free. I’m eating lots of fresh fruits, green smoothies, nuts/ seeds, egg whites and black beans. Enough talking, on to the eats!wiawphotobuttonHere is a little grocery I did the other day; nut thins, milk, spinach, nuts, chocolate, pizza crusts, alfalfa sprouts, black beans and an Asian pear to try.
485462_10101561558975160_498631603_nLike I said, I’m trying to cut out my dairy and meat consumption but I will still be doing egg whites. The last “meat” meal I had was a lean beef burger made with the alfalfa sprouts. It was actually pretty good and I may try to make something like that again but maybe a black bean burger.603866_10101561558970170_897874997_nNext up for snack, I tried the Daiya cheese with some nut-thins and green grapes. The cheese is not bad but I definitely like it cool rather then cold from the fridge.  263166_10101561559035040_1121022344_nOh and not to mentioned topped with a pinch of parsley and fresh pepper.941619_10101561559040030_635330914_nFor dinner, I either do a salad or a “green smoothie.” This one has Vega protein powder, spinach, flax seeds and flax milk. It was not my favorite green smoothie since I wish I had some raspberries to blend in it too. Now that I am super busy, it seems like I can’t do everything I need to do in one day. Hopefully I can get some studying in before work. Grocery Haul Monday

Normally, when I was a good little blogger, I was doing meal planning Monday. Well I sort of have that for you today, but more in a grocery haul style.

Yesterday I had a fun day with my mom. Yes, we have fun going grocery shopping. Too much I think. We first went to have lunch at the Burger Joint in Cross County Mall in Yonkers. The burger is so yummy and I love that they use hormone-free cows!943774_643506328996264_220329088_nWe walked around the mall and got some fun goodies. Of course, we had to stop in to get some froyo from Cups. I got a mix of vanilla, original, cheesecake and white chocolate macadamia. I topped it with honey, strawberries and pumpkins seeds.IMAG1172On to the groceries! Now as usual I have some eggs, rice, protein powder and organic cheese at home. I needed some more beans, milk, spinach and fruit. 941090_643675198979377_1316549275_n (1)And I found this awesome honey almond gluten-free find from Nature’s Path. It’s really good and tastes just like their regular granolas. I’m happy they did this; go Nature’s Path!943580_643675212312709_291758444_nAlso got some oats and nuts…578857_643675208979376_959531861_nOh and some delicious plain 2% Chobani. I am trying to cut down my sugars and going from 22g (most  flavored ones) to 7g (the plain ones) is a huge difference.577502_643675232312707_942040734_nI just added two tsps of agave to the Greek yogurt and added a little granola and pumpkin seeds and it was delicious. Plus a side of grapes for some extra sweetness.575438_10101555469653210_699461404_nMeal wise; I will be doing eggs, beans, rice and salads. Some chicken or beef here and their. Snacks is usually nuts, cheese and/ or fruit. Breakfast is some form of oats. That’s just how I roll. To conclude this food filled post, I hope everyone has an awesome Monday and rest of the week!

WIAW #47: Grocery Edition

It’s that time again.

What I Ate Wednesday is here! Head on over to Peas and Crayons to join this crazy awesome food party. For this edition of WIAW, we are going to go a bit into some groceries I bought this week.wiawphotobutton My breakfasts now have consisted of the non-chocolate version of this recipe with a drizzle of maple and sprinkle of trail mix. Now of course, I do have things already in my pantry/fridge like black beans, organic burgers, flours, etc. I went and grabbed organic soy milk, coffee, pears, nuts/ seeds, organic oats, a Luna bar and chocolate. Can’t forget the chocolate!417787_10101552179352000_1612962632_nOh and this loaf by Ener-G actually tastes good untoasted. Not like that other one. Just ew.IMG_20130415_134605Okay… can you see what I am seeing? Quinoa burgers that are corn and gluten-free! I hope these are good. The other brand I tried was good, but needed to be cooked on the pan. These say I can put them in the toaster. Much easier option.537863_10101552179356990_546462330_nAlong with the burgers, I got some potatoes, string cheese (hormone free!), spinach, eggs, kiwi and ice cream. By the way I found the ice cream in Dollar Tree for… yep. $1.00! I would have bought the five that remained, but I restrained myself. Trust me, was very hard.48038_10101552179347010_1181992886_nMost of my dinners have consisted of black beans, some veggie, potatoes and a protein which usually is an organic turkey or beef burger. I’m back into my black beans and potato phase. Yum, yum!

Focused! (Plus Coaching Information)

lp I’m restarting my whole health and it feels good. Let me not say restarting, but rather going back to what I know works. I love trying out new workout plans, foods, diets, etc. But you know what? It’s time I stick to what works. You know what it was? It’s MY plan.

DAMY definitely was a huge inspiration. I just did a little grocery shopping, myself. I’m going to try out Green Giant’s digestive health mix with white beans, carrots and spinach. I don’t normally do fruit pops or deli meat, but sometimes I just crave it.547749_629472910399606_1885692177_nLove this DeBoles multi-grain pasta and can’t forget some dark chocolate. I also found this Ener-G bread to try. Light white rice with flax bread, which has 50 calories and 1g of both protein and fiber. It tastes HORRIBLE untoasted, but is yummy toasted. I just had to be blunt there. 544116_629484633731767_967961_nI made “open-faced” chicken and spinach sandwiches. It was so good. I would definitely get this bread again. One thing I liked that it was only $3.69. Because seriously, so many gluten-free breads are $5.00 and up and this price is more reasonable for my budget.733810_629528920394005_1900445050_nYesterday I made a little batch of these but I used chocolate protein powder and melted dark chocolate. Perfect little night time clean treat.

Friends & Tid Bits

Happy Easter my friends. Before this post, I have to share this with you guys. My friend wrote this to me. She is amazing and beautiful, love you!

After watching the documentary Vegucated it really opened up my eyes to a whole new life. I have been really inspired by Sabrina to take on healthy life by having a healthy diet. I have learned the importance of food and your relationship to food. After this documentary it further showed me more changes that I can make. I want to live a positive lifestyle filled with love and now I want to extend that love to a cruelty free diet. I have only started this new change and so far I feel fantastic.It is simpler than you think, its all a matter of choices. As they said it the documentary once you start eating healthier you want to eat healthier. Things taste better and you enjoy it more. As the days go on this change will get easier and just become a new lifestyle.   I am going to try my best and try to be as vegan as I can, but I am not aiming for perfection, just being as healthy as I can. My goal for 2013 is to love my body, my life, friends and family, all living things, and be thankful for everything I have. Always think with a positive mind and lead with love and anything is possible…

I will be hanging out with my family and enjoying some quality time with an old friend. I never told you guys about how I took one of my friend’s grocery shopping. I was so proud of her, she really learned a lot and cleaned up her eats quite a lot. Baby steps!155062_623959810950916_1670330185_n (1)I even showed her how to make a protein pancake. Hi [Paleo]Ho!

It’s Friday!

And that means in a few days I will be going to Puerto Rico! Oh my, did I forget to mention that? Yes I am going to visit my grandma and also my cousin is getting married! It should be a good time. Let’s just hope there is no crazy family drama. *Crosses Fingers*

I have a few random things for you. I did a mini Paleo grocery shopping the other day and here are a few of the goods. I know not all of it is 100% Paleo, but hey, I do what I can.IMG_20130226_124025You can see some almond butter hiding in the corner and I also got raw cheddar cheese. Oh and not to mention a pint of this. It may or may not have been gone in the very same day.IMG_20130226_124101Not only does the above Ritter Sport chocolate not have any soy, but neither does this delicious milk chocolate bar I found. It was kind of pricey for the size, but you know me and I need a treat.IMG_20130226_125013Moving on… I went to yoga one day this week. It was really nice but honestly, I like my weight lifting.

Going Paleo [Diet] + Recipe!

I may have cheated and started the Paleo Diet this past Wednesday. I know I was going to start it today, but I was just so curious to try it out. I haven’t been 100% perfect, but definitely at least more than 90%. I went to the grocery store on Wednesday to grab things for it.

Trust me, there will be more fruits and veggies then this. I just didn’t want to over get anything in case it went bad. I have that habit of not using things if I have too much.

Brussels Sprouts, Pears, Banana, Apple & Spinach

I also made a batch of these grain-free banana nut muffins in a loaf pan. I had no idea they were Paleo (granted that you not use peanut butter and do honey); well partially because I wasn’t thinking like that at all. Took 30 minutes instead to cook in the oven, but no biggy. They are worth the wait. IMG_20130220_104644For breakfasts so far I’ve eating the loaf or egg whites with spinach and sausage. For a snack or even with the egg breakfast I’ll do fruit and nuts. I try not to go over 15g of fat because of my bile reflux, but it isn’t always easy on said Paleo Diet.IMG_20130220_095530It’s only been five days, but how do I feel? Well I must say I thought I would be livid about not having dairy, but I honestly don’t mind (plus I am lactose intolerant and really should have much anyway). I also thought I would have carb withdrawal but having made the muffins as a bread loaf tricks the mind.

I notice that I feel more “satisfied” and not super bloated and stuffed as when I eat carbs. Just so you know my starches are mostly in the form of rice; rice breads, wraps and such.

Here is a little treat for you though. Coconut Almond Paleo Pancakes! I have been looking at a ton of Paleo pancake recipes but most call for almond meal/ flour or coconut flour. I honestly don’t have the money to purchase either. But I did have almonds and unsweetened coconut flakes from Bob’s Red Mill.

Let’s improvise shall we? Now this recipe is definitely a once in a while treat. Each pancake comes out to around 180 calories but is full of delicious healthy fats (about 15g). It’s so yummy and coconut-ty, perfect for a nice Sunday breakfast. Enjoy!DSCF1037Coconut Almond Paleo Friendly Pancakes Ingredients (Serves two)

  • 1/4 Cup + 2 Tbsps Unsweetened Coconut Flakes (Plus extra for topping)
  • 3 Tbsps of Whole Raw Almonds (I think sliced would work way better)
  • 1 Whole Large Egg
  • 1 tsp of Honey (Agave or pure maple syrup works too)
  • 1/2 tsp of Coconut Sugar (Or Light Brown Sugar, if not Paleo)
  • 2-4 Tbsps of Unsweetened Vanilla Coconut Milk (like So Delicious or use Almond Milk)
  • 1/4 tsp of Baking Powder
  • 1 tsp of Chia Seeds (Optional to mix in and for topping)

Place the egg, honey and 2 Tbsps of coconut milk into a blender. Blend for a few seconds and then add remaining ingredients. Blend well until it reaches a “pancake” batter consistency. If the mixture is too thick, then add an extra Tbsp or so of milk.

Divide the batter among two flat plates and place each plate in the microwave for about 1 1/2 – 2 minutes. Once both “pancakes” are cooked, remove from plates and sprinkle with extra chia seeds and coconut flakes and drizzle a little more honey on top.

Question: How do you feel about this Paleo diet thang? So far I must say, it is pretty good. I had a piece of toast (aka non-Paleo) and my acid reflux instantly came. So, hmmm I wonder?

LiveFit & “Nutella” Fudge Truffles

Casey over at Vegerita found my blog and introduced me to LiveFit! What is LiveFit? It’s a body building program by Jamie Eason. It’s broken down into three phases and lasts 12 weeks. I decided to give it a try because I am looking for a challenge and I wouldn’t mind a short worker.

The only struggle is the non-cardio business. I’m as much of a cardio junkie as I am a chocolate addict. Okay, maybe not as much, but you get the picture. So far I am on day three and I notice that I feel the intensity. I can’t wait to see how the rest of the workouts go.

You know I will be updating you on that for sure. If you want any information on it, check out the website and Casey’s blog too! Onto the eats. The program has a specific diet plan that you should follow. I decided to get a bit more strict on it. Here are my purchases;IMG_20130216_182113I got lentils from Trader Joe’s to try because I want to get in a good amount of protein and iron without having to eat meat. Meat has slipped into my diet here and there, but I don’t want it.IMG_20130216_193919I also got this brown rice protein powder by NutriBiotic to try.IMG_20130216_182124It smelled pretty good and I decided to make a protein pancake with it. It’s for work Monday, so I’ll let you know how it came out sometime Tuesday. IMG_20130216_191759Lastly, I made some truffles using the amaretto fudge truffle recipe. I subbed the almond butter for chocolate hazelnut butter, omitted the almond extract and “caramel sauce,” added 1/2 tbsp of non-dairy milk and filled it with crushed hazelnuts. So good and had a “Nutella” like taste.IMG_20130216_193833Now one thing I wanted to tell you guys about what I met up with a Personal Trainer from Planet Fitness. They offer free personal trainer training if you have the Black Card. He went around me with in the gym for an hour showing me what machines are good for what body parts and how to properly excises each muscle group. He also gave me my target heart rate (which is 166) and told me to do weights first.

Now normally I do cardio first but he said the first 20 mintues of your workout, you’re body is burning up glucose,  then it starts burning fat. So if you do 15-20 minutes weights then cardio, you will be burning fat during your cardio session. I always heard different things but after reading about LiveFit, I think that’s the point; Burn fat!
