And The Bass Keeps Running, Running

Only a few more days til my 25th birthday and one day until I got home for a few days.I feel like the past few months have been crazy for this chick here. I haven’t been the best blogger, but I hope y’all just bear with me. My training schedule for work has been crazy. I’ve mostly been working nights, so I am quite tired. But when I can, I manage a workout or two, even at 1:00am!You guys are awesome at being patient with me. Totally appreciate it. Like this weird picture I forgot to show you from Saturday. My friends and I went to an art festival in downtown Beverly, MA. Free Greek froyo? Yes please! So that’s the weird white thing you see. It was yummy.I promise myself I need to get better with meal planning. I seriously just have to stop being a, pardon my french, lazy ass mofo. I bought some asparagus from Trader Joe’s. I really didn’t care for the flavor, but I am just going to heat it up and “pan fry it” in some olive oil and garlic. That should do the trick. And I’ve been making my own trail mix; bought some chips, crans and the cashs. Mmm, love this combo.I also gotta stop with the dairy. I just feel icky, but oh my gosh, why is dairy so good? I had this pomegranate Greek yogurt with blackberries and the Q’ia cereal. Damn, it was tasty!I hope everyone is doing well! I am finishing this post to you at 2:00am… only four more days until my birthday! You know next week’s WIAW is going to be awesome.

Question: I’m sure I’ve asked this before but I also love people’s ideas! How do you get yourself back on track, whether with exercise or meal planning?

WIAW #53: Oh The Places You Will Go

Another Wednesday means another What I Ate Wednesday.

You won’t guess where I am? That’s right, I am in Massachusetts. Of course, New England is always calling. For this WIAW, I show you some eats I have been grubbin’ on. But before we do that I wanted to talk about something that may be on your mine. Why are you seeing wheat?wiawphotobuttonWell to be honest and this is the honest truth; I just haven’t been hungry for anything. So the only thing I manage to eat is a sandwich that someone prepares for me. How does my stomach feel? Most of the times, it’s okay and I try to stick to sourdough or not to whole wheat bread (less bran for digesting). I know it probably not the best thing but I wanted to show you that I am human.

It’s just that I have been all over the place, [even the post is all over] and these eats will show you so. Non-the-less they are delicious. Oh, I had to share with you some yummy vanilla froyo with blackberries and almonds with my mom while we were at the mall. Who can pass up some froyo?Now for breakfasts, I have been doing this awesome WholeFoods find from Nature’s Path; Qi’a! It’s a delicious gluten-free superfood cereal and I’ve mix it into my breakfast cakes. The stats are awesome, you just really have to check it out. I tried out the cranberry vanilla in store and fell in love. And it has 15% of iron, which is perfect for my anemic behind.For snacks, I couldn’t resist picking up on of these bad boys.And how bout my lunch today? My friend and I went for Brazilian. My, oh, my! But I think I am the only one who eats Vegetarian style at a specialty meat BBQ place.Other snacks have included bananas, apples, pears, nuts/seeds and dark chocolate chips. Nothing too interesting. But so far my favorite meal was this one of a turkey and herb sandwich on sourdough bread with blackberries and yogurt. Mmm, mmm good!Question: Do you ever feel being in the blog/ social media world that you have to be perfect? I sometimes feel that but now I am just being me and showing that I am not perfect, I have flaws… MANY, MANY flaws. But it’s what makes me, me.

WIAW#52: [Trying To Be] Lean & Green

Happy What I Ate Wednesday!

Gee, I am really trying to be good. I have less then 5 days til the AAAI/ISMA conference and I need to look my best. Unfortunately? “Mother Nature” has gotten in my way and I just want chocolate! But I am trying, so here are my eats as I try to be lean and green.wiawphotobuttonFor breakfasts, I make one and a half servings of this cake and slice it a la pancake. This had been my go to breakfast. I’ve just been wanting pancakes all the time for some reason.Lunches and dinners have been the same just like last week. Sometimes a little bit of chicken with black beans and green squash/ zucchini.Or maybe asparagus with chicken and a couple of bocchinis (little fresh mozzarella balls).I’ve gone out a few times this past week and I went to Panera with a friend and had a turkey sandwich on honey wheat bread. It was super delicious!Desserts and snacks? Same, same. Trail mixes or fruit. My cup of tea!935209_662724447074452_1607508794_nQuestion: What’s your favorite lean and green dish? From this week for me it’s been roasted chicken and asparagus. I can’t believe I never tried grilled asparagus, it’s the BOMB!

GF Coconut Breakfast “No-Bake” Cake

I’ve been doing a lot of oats as you know. But the oats and I don’t have a happy relationship, so I wanted to tone down the oats intake. I had a little bag of coconut flour and decided to search for a breakfast cake type recipe and found this one from The Wannabe Chef.

I modified the recipe using what I had on hand and it came out pretty delicious! I was surprised at the sweet hint of coconut in the cake. This recipe is gluten-free and has about 15g of protein! It can be completely paleo if you omit the oats and add a smidge more ground flax seeds or coconut flour.

It is your choice, but I like how the cake comes out with the oats better. It also doesn’t have as much fat as the original recipe, since you know I have to be careful due to my bile reflux. Best of all is you just have to pop in in the microwave. No baking [aka oven] required. Enjoy!942272_10101562169252160_409450196_nIngredients for Coconut Breakfast Cake: (Inspired by this recipe, serves one)

  • 2 Tbsps of Coconut Flour
  • 1 -2 tsps of Agave or Honey
  • 1 Tbsp of GF Rolled Oats (but any will do, or a sub for more flax or flour)
  • 1 Whole Egg and 1 Egg White
  • 1 Tbsp of Non-Dairy Milk
  • 1 tsp of Earth Balance, melted (maybe try coconut oil or applesauce?)
  • 1/2 tsp of Vanilla Extract
  • Dash of Sea Salt
  • 1 tsp of Ground Flax Seeds

Place all wet ingredients, plus sea salt into a bowl and whisk well together. Then add the flour, oats and flax seeds into bowl with wet ingredients. Mix well together. Then taking another small bowl or ramekin, spray bowl with a little non-stick cooking spray. Pour cake mixture into bowl.

Place in the microwave for 1 1/2 to 2 minutes, depending on your microwave. Remove cake from microwave and turn upside down to remove and place onto a plate or another bowl to let it cool for a few minutes. Top with more flax seeds, nuts, agave/ honey drizzle or whatever your heart desires.601649_10101562260085130_661089716_nQuestion: Are you a fan of coconut flour? April Favorites!

Here is a little post for you about my favorite posts from this past April! I had a lot of good stuff going on such as the sugar-free chocolate dip. Who doesn’t love chocolate and sugar-free? WIAW #48: Down To The Wire

Happy What I Ate Wednesday! Thanks Jenn for hosting this food party.wiawphotobuttonIt’s time to get cracking! I have one month until the conference and it is time to kick it into high gear. It’s down to the wire now; cleaner eats and less sweets. *cringe*

Breakfasts: Breakfast cakes again! But for this one I took out all the sugar except for maple syrup. I’m trying to cut back on “adding sugar” to things. Topped it with some pumpkin seeds and the Nature’s Path granola I found. I was seriously hungry.IMG_20130430_084259For snack, it’s some variation of fruit and nuts or cheese and nuts. 532302_10101549381459000_596674822_nLunches have been some homemade black bean and quinoa burgers topped with more black beans and some spinach with an olive oil drizzle.163577_644189342261296_1807677602_nI normally don’t do an after lunch snack because lately my lunches have kept me full and I have an earlier dinner. This ones was delicious; egg white omelette with Kerrygold gouda cheese, black beans, almonds, strawberries and yes… more spinach!100MEDIA_IMAG1180For after dinner, I have a trail mix of pumpkin seeds, raisins, sunflower seeds and a few chocolate discs. Since I have one month until my personal training conference, I’m buckling down.nutsQuestion: How do you eat “cleaner” for events? I definitely like to cut out the dairy, get in my protein, fruits/ veggies and lower the carbs a bit.

Health & Weight Update

Happy Friday my friends!

Today we will be talking about my health while showing you a few beautiful pictures from my walk with a good friend of mine yesterday in Fort Tryon Park. Now as you know between my food allergies, anemia, bile reflux and hiatal hernia, things haven’t always been good for me in terms of my health. But then as you know, I decided to gain weight. I’ll recap that in case your are new. My lowest weight was 138lbs, but I wasn’t healthy at all.

Sure I was skinny and got to my overall weight goal, but what happened? I was sick, sluggish and ever part of my body was fragile. At that time, my anemia was getting worse. When I worked out too hard, it would affect my body a lot. I simply had no energy what so ever. It took some time to decide, but I decided I wanted to gain and go to 155lbs maximum. I did just that, but then I got into a little depression in February. I was just not in the mood and most of the time I at ice cream for dinner. It was not a good point in my life and then my weight went up to 164lbs. Almost 10lbs more then what I originally wanted.

Where is my weight at now? I fluxuiate between 159-162lbs. At first it was annoying and I wanted to get back to the 155lbs, primarily because that’s the highest I could get without starting to need new clothes. Most of my clothes still fit now and in some I actually look better; more curves.   It was hard to deal with this new bigger, yet stronger and healthier body. It feels much better then striving to feel happy just to fit into a size 4 pair of jeans. I went to the doctor’s and they said nothing was wrong. I am perfectly healthy.

It amazing how food can cause sicknesses like in the case with my food allergies. But I never thought losing weight would make me sick too. I should have known, I mean… being 240lbs was not healthy for me at all. Literally everything is about balance; whether it’s eating of your weight.I’m am writing this for you now because it took me almost two months to accept this new body I am in. But honestly, I have never felt healthier, stronger and even sexier. At the end of the day, you have to do what you feel is right. I am happy that at one point in my life I could say I lost 100lbs, but now I am content knowing that my weight loss/ maintain/ weight gain journey has created a much healthier me.

Happy Earth Day!

Happy Earth day my friends! How are you enjoying the lovely day?I decided to go “green” for Earth Day, you like? And I also decided to get my meatless Monday for today and have one of my favorite quick dinners; veggie burger, grapes, almonds and spinach! This cat… so you know what he is doing? Literally guarding me as I use the bathroom. No comment at all. Such strange habits he has, I swear.  I have been a tab busy working on my presentation for the kickboxing class I am going to be presenting at. Just a quick one, but I will be giving them a piece of my coaching plan for free.IMG_20130420_000519That’s it. I am going to go continue my studying adventures. It’s Been A While

Wow, I have finally updated with you on this!

I am quite behind on some of them but I will give myself some “lee-way.” and allow myself 5 things that I don’t have to do before I am 25, but I have to do it at some point while I am 25. Sounds good to me!

  1. Go to my SIXTH Broadway play (forgot I saw more!).
  2. See a comedy show with friends.
  3. Visit Boston and eat all day.
  4. Attend the personal training certification and pass!
  5. Visit a Vineyard and find a wine I like.
  6. Kiss a random stranger (and other crazy things, shh!)
  7. Take my parents out to dinner and thank them for all they’ve done for me.
  8. Take a trip somewhere, anywhere, ALONE.
  9. Finish reading at least FIVE books, not school related.
  10. Go hiking.
  11. Sign up for a 5k.
  12. Take my dad to a baseball gone, not in NEW YORK.
  13. Get a pair of sexy heels or dress
  14. Buy a good pair of jeans.
  15. Treat myself to a nice hotel.
  16. Start my coaching program.
  17. Complete a full week being solely vegan <–changed to Paleo.
  18. Have “x” amount of money in the bank.
  19. Get rid of half my wardrobe and donate it.
  20. Write a letter to my 40 year old self and open it then (love this idea)
  21. Learn how to let go and go with the flow.
  22. Be fearless, and get over my anxiety.
  23. Give new things a chance.

I have an idea as to which are going to get the “lee-way.” I’m still four books behind, so I think that may be one. I’ll try to read the 5 before summer is over at least. I still have some problems going with the flow, so I will definitely still be working on that. But I am learning.I went to grab some groceries yesterday with my mom. I also got organic turkey burgers, but stuck it in the freezer before I snapped said photo. Fruit, nuts, granola, milk, cheese, agave, some broccoli and a couple of Odwalla bars for myself. Can’t forget some coffee either.This one isn’t so bad, but I need to get my hands on Green Mountain Coffee. It’s expensive in New York. Maybe it’s time for another road trip? Oh and this has been my favorite snack.I just took 1 Tbsp of Almond Butter, 1/2 Tbsp of Vanilla Protein Powder and added milk til it got to a “dip” consistency. Sliced up a pear, oh my!
