WIAW# 51: Same Ole, Same Ole

Happy What I Ate Wednesday ya’ll!

Yesterday I was in Baltimore, Maryland. It was such a blast, but we’ll talk more about that tomorrow. 20130521_155810Today another Wednesday is here and it’s time to show you some eats, right? This week I am going to show you meals that have made my tummy happy; no acid/ bile build up and no pregnant look. Yes, no more of that please and if you don’t know what WIAW is, go check out Peas and Crayons.wiawphotobuttonBreakfasts have pretty much been the same, this breakfast cake with some type of nuts/ seeds or fruit on top. On of my favorite for this week? The cake with sunflower seeds, almonds, milk and fresh blueberries.20130515_092035Just like last time, my snacks have been some type of fruit and nuts. I am getting tired of pears so I’ve been doing blackberries, bananas and even peaches.20130522_081239Lunches and dinners have been the same too. Since I found what foods work for my stomach, it makes me so happy. It gets boring at times but I try and do what I can. 292015_659391720741058_1173831911_nI found this yogurt at one of the local supermarkets here in the Bronx and this was the only one that didn’t have corn starch in it. It was pretty delicious I just wish I found a vanilla flavor.20130517_212706I’ve been digging this combo of black beans on top of chicken with some greens. My, oh my.20130516_110832Dessert? Well to be honest coffee, a banana or nuts have been my dessert as of late. Since I can’t really workout to the best of my ability due to my arm, I have to get more strict with food. And it feels great!969709_660563867290510_1730698749_nQuestion: Have you ever tried Silk soy yogurt? Ever had something “non-traditional” for dessert? I have to say have oatmeal for dessert one day was quite bizarre for this chocolate loving young lady.

WIAW #49: The Return

You’ll probably notice that my last post was on Friday. To be honest, I just haven’t felt like taking pictures, posting or doing much of anything. Well that isn’t entirely true.

I’ve been busy with work and coaching people that every second I get I am either cleaning, prepping food, working out or trying to study for my personal training exam. Don’t take it personally if you don’t see much of me this month. I will try my best, but don’t worry I will be around.

For this What I Ate Wednesday, brought to you by Peas and Crayons, I show you a few eats I have devoured this past week. I have mostly been doing meat and dairy free. I’m eating lots of fresh fruits, green smoothies, nuts/ seeds, egg whites and black beans. Enough talking, on to the eats!wiawphotobuttonHere is a little grocery I did the other day; nut thins, milk, spinach, nuts, chocolate, pizza crusts, alfalfa sprouts, black beans and an Asian pear to try.
485462_10101561558975160_498631603_nLike I said, I’m trying to cut out my dairy and meat consumption but I will still be doing egg whites. The last “meat” meal I had was a lean beef burger made with the alfalfa sprouts. It was actually pretty good and I may try to make something like that again but maybe a black bean burger.603866_10101561558970170_897874997_nNext up for snack, I tried the Daiya cheese with some nut-thins and green grapes. The cheese is not bad but I definitely like it cool rather then cold from the fridge.  263166_10101561559035040_1121022344_nOh and not to mentioned topped with a pinch of parsley and fresh pepper.941619_10101561559040030_635330914_nFor dinner, I either do a salad or a “green smoothie.” This one has Vega protein powder, spinach, flax seeds and flax milk. It was not my favorite green smoothie since I wish I had some raspberries to blend in it too. Oh well, there is always next time.217026_10101561559064980_1901066250_nI’ve been trying to relax more now with these awesome Opium flower incense. Now that I am super busy, it seems like I can’t do everything I need to do in one day. Hopefully I can get some studying in before work. April Favorites!

Here is a little post for you about my favorite posts from this past April! I had a lot of good stuff going on such as the sugar-free chocolate dip. Who doesn’t love chocolate and sugar-free? WIAW #48: Down To The Wire

Happy What I Ate Wednesday! Thanks Jenn for hosting this food party.wiawphotobuttonIt’s time to get cracking! I have one month until the conference and it is time to kick it into high gear. It’s down to the wire now; cleaner eats and less sweets. *cringe*

Breakfasts: Breakfast cakes again! But for this one I took out all the sugar except for maple syrup. I’m trying to cut back on “adding sugar” to things. Topped it with some pumpkin seeds and the Nature’s Path granola I found. I was seriously hungry.IMG_20130430_084259For snack, it’s some variation of fruit and nuts or cheese and nuts. 532302_10101549381459000_596674822_nLunches have been some homemade black bean and quinoa burgers topped with more black beans and some spinach with an olive oil drizzle.163577_644189342261296_1807677602_nI normally don’t do an after lunch snack because lately my lunches have kept me full and I have an earlier dinner. This ones was delicious; egg white omelette with Kerrygold gouda cheese, black beans, almonds, strawberries and yes… more spinach!100MEDIA_IMAG1180For after dinner, I have a trail mix of pumpkin seeds, raisins, sunflower seeds and a few chocolate discs. Since I have one month until my personal training conference, I’m buckling down.nutsQuestion: How do you eat “cleaner” for events? I definitely like to cut out the dairy, get in my protein, fruits/ veggies and lower the carbs a bit.

WIAW #47: Grocery Edition

It’s that time again.

What I Ate Wednesday is here! Head on over to Peas and Crayons to join this crazy awesome food party. For this edition of WIAW, we are going to go a bit into some groceries I bought this week.wiawphotobutton My breakfasts now have consisted of the non-chocolate version of this recipe with a drizzle of maple and sprinkle of trail mix. Now of course, I do have things already in my pantry/fridge like black beans, organic burgers, flours, etc. I went and grabbed organic soy milk, coffee, pears, nuts/ seeds, organic oats, a Luna bar and chocolate. Can’t forget the chocolate!417787_10101552179352000_1612962632_nOh and this loaf by Ener-G actually tastes good untoasted. Not like that other one. Just ew.IMG_20130415_134605Okay… can you see what I am seeing? Quinoa burgers that are corn and gluten-free! I hope these are good. The other brand I tried was good, but needed to be cooked on the pan. These say I can put them in the toaster. Much easier option.537863_10101552179356990_546462330_nAlong with the burgers, I got some potatoes, string cheese (hormone free!), spinach, eggs, kiwi and ice cream. By the way I found the ice cream in Dollar Tree for… yep. $1.00! I would have bought the five that remained, but I restrained myself. Trust me, was very hard.48038_10101552179347010_1181992886_nMost of my dinners have consisted of black beans, some veggie, potatoes and a protein which usually is an organic turkey or beef burger. I’m back into my black beans and potato phase. Yum, yum!

WIAW #46: Mother’s Birthday!

Happy What I Ate Wednesday my friends! Today is all about my mom’s birthday. Don’t forget to check out WIAW via the lovely Peas and Crayons.wiawphotobuttonFor breakfast, I’ve been doing either these oats or cereal with fruit. This one is a fruit and nut granola mix with pear slices and that unsweetened rice and quinoa milk I bought to try. It was just okay, it tasted mostly like water. Like skim milk sometimes tastes like water to me.For lunch I ate an open faced sandwich with mozzarella cheese, spinach, garlic, olive oil and Parmesan cheese. So, so delicious!And then this happened. No I didn’t eat any, just some frosting.She’s such a cool mom. Love you!We went to a place in New Rochelle called Don Coqui, it’s an upscale Puertorican restaurant.They gave up chips and dip. The black bean dip was quite delicious.My mom had pulled pork and yellow rice with pigeon peas.I had a roasted chicken stuffed with black beans/ ground beef and veggies.Then my dad asked them to sing happy birthday to my mom. The brought out a tres leche cake (three milk) with rum in it. It was really strong and I ended up eating it all. Yes, my tummy hurts this morning, but it’s okay. Once in a while I allow myself some leeway.Happy Birthday NEMO! Hope you enjoyed.

Question: Are you a fan of Puertorican food? Being Puertorican, well, I eat it a lot of it. My favorite type of food is Brazilian. No ifs ands or BUTS!

WIAW #43: Northern Adventure

Happy WIAW :)

I’ve been in five different states in the past few days. It’s been an awesome little adventure with my mom. This WIAW, is all the random eats from my little adventure and some from home as well. Got to start somewhere right? And please check out Peas and Crayons aka the home of WIAW!WIAW GOES GREENBefore we hit the road one of the days, breakfast was these oats, but I topped it with pecans and pure maple syrup. Somewhere are the raisins. Ya just have to look very closely.IMG_20130323_105820One of my go to snacks on the road was almonds and string cheese. Quick and simple. One of the lunches I had was Ponderosa and I had chicken, mash potatoes, and salad.IMG_20130325_121749 Of course, some froyo action. A mix of coffee, chocolate, vanilla and butter pecan froyo with agave drizzle, roasted almonds and kiwi.BGUtLK1CQAAONPAMy favorite meal though was this Brazilian deliciousness; rice, beans, bean stuffing (made with tapioca flour), plantains, green beans and salad. So, so good!63058_10101533482824990_143665351_nFor dessert, I failed to take a picture of the chocolate. But it was chocolate, that’s all you need to know. A few Godiva truffles made their way into my tummy. Now.. on my way to Vermont!

WIAW #35: Can’t You Tell?

Can’t you tell.. that green in my favorite color? Well from this What I Ate Wednesday, trust me, you’ll notice. From spinach, to pears, to pumpkin seeds to even green wrappers. Oh it’s not easy being green. Oh and if you don’t know what WIAW is, check it out at Peas and Crayons!wiawphotobuttonBreakfast: I did a protein cake using this recipe (the vegan one). I added an egg white to it, which made it non-vegan of course. I topped it with pumpkin seeds, sunflower seeds, raisins and a maple syrup drizzle. Yes that is a string cheese, don’t ask. Just try it you dare.

IMG_20130111_173416Dessert? I’ve been doing this “mess” a lot of some base (today it was a mini chocolate protein cookie), yogurt, whip cream, seeds, raisins and maple syrup drizzle. WIAW #33: The Last [2012] Eats!

Happy first WIAW of 2013! This post is all about some of my last eats of 2012. Hope 2013 is even more delicious and if you don’t know what WIAW is, check it out at Peas and Crayons!

My favorite breakfast from last month was the waffle I made with buckwheat flour, so so good!IMG_20121223_095922Gingerbread coffee? Yes please!

WIAW #31: A Whole Lot of Yum

Happy WIAW folks. Being that it’s Wednesday, that means my final was yesterday. Let’s not talk about it shall we? That’s all I will say about it. But, I do want to show you yummy eats from the past week for each meal. If you don’t know what WIAW is, check it out at Peas and Crayons!wiaw what i ate wednesday button happy healthy holidaysBreakfast: I’m sure if you have been reading my blog, I have been raving about the microwaveable pancake. I got a little creative with it and made the non-vegan on and instead of using the flour, I subbed it for 1/4 cup of Nature’s Path Gingerbread granola. The results? Tastes like a gingerbread pancake, yum!IMG_20121207_094627One of my favorite snacks has been the Cabot cheese bars plus the high antioxidant trail mix (minus walnuts) from Whole Foods. So, delicious.IMG_20121206_101540On a cold raining day here in Massachusetts, soup totally hits the spot. I had the tomato basil soup topped with parmesan cheese and parsley. Plus a side of Wasa Crackers.IMG_20121205_211225I have been eating more savory meals as you can see. Another snack I have been loving is having an egg (scrambled or hard-boiled) with sauteed spinach and a little cheddar cheese. Topped on Wasa crackers with a pinch of sea salt, pepper and parsley.IMG_20121209_132005I made this pasta similar to this recipe but instead of using the Kraft’s vinaigrette, I used an extra tbsp of olive oil, upped the parmesan cheese to 1/4 cup, added 1/4 cup of shredded mozzarella and 2 tbsps of soy milk. I also used fusilli pasta instead of gnocchi and it was absoultey yummy.IMG_20121207_104127For dessert? The picture doesn’t do it justice but I’ve been having the mini chocolate chunk cakes topped with salted pumpkin seeds and raisins. The sweet and salty combo may sound weird but trust me, it’s heaven. Who says no to gooey chocolate cake?IMG_20121207_155334Question: What are some combo’s you’ve been loving? Me? Well definitely chocolate and pumpkin seeds, cheddar cheese and pumpkin seeds and pears and pumpkin seeds. Notice a pattern?
